Mexican Steak Salad in a Creamy Avocado Dressing ~ Greens, carne asada, and other goodies lavishly coated in creamy avocado dressing.We’re well into the first quarter of 2017. It’s still too new to determine if it’s going to be better, worse, or on par with 2016. Although, so far it does look to be better as 2016 went downhill on Jan. 2nd. Plus, is it weird I measure my years by quarters now? I guess it comes with owning a business. But so far this year is awesome.
I know some things are out of my control and left to the universe, but I do know I have the power to create a positive environment around me. Making little changes in my life can add up to big improvements.One of the little changes I need to focus on is my eating habits. This past year, I didn’t gain any weight (yay), in fact, I lost weight (yay), due to stress, not eating, side effects of medicine, and stress (boo, and yep, mentioned stress twice.)
The pounds I shed were able to be lost, as I am carrying a few more than I should be. I am now at the lowest I’ve been since before my daughter’s first birthday. I love that my clothes fit better. But losing the weight in the manner I did took a toll on my body.

However, since the weight is off, I want to keep it off and that means staying on top of my diet. Going with the theme of “échale ganas para comer más saludable” or do you want to eat better, I’ve partnered with Avocados From Mexico to do just that, keep eating well.

Despite being a ‘healthier’ eater now for 9 years, eating a proper lunch is still really hard for me. I know it probably sounds funny, particularly since I am a recipe developer, one who is always in the kitchen; surely it must confound the mind that eating proper meals would be difficult for me. Alas, tis true.
Having on-the-go meals is actually the best solution for me. Yes, I work from home. Yes, I can reheat anything, make anything, etc. But having portioned out meals, ready to go, (just as I used to do when I worked from home), is the best way to ensure I eat when I need to eat and what I need to be eating. It just might be the perfect meal…well at least for me.
I love that Avocados From Mexico are always in season, therefore I can pop down to my local market and buy them all year round. This also means that they’re always fresh, they aren’t picked and stored due to a limited growing season, (which most other fruits and vegetables have), or are shipped to us from across the world in order to be available all year long. I chunked them as part of the goodies in the salad, but the real star of this meal is the creamy avocado dressing. I’ve lightened it up by using Greek yogurt and low-fat milk. I’ve made it a bit thicker (on purpose) because it can double as a dip or sauce (or if you’re like me, eaten by the spoonful out of the fridge for no other reason than because you can.)
Steak Salad in a Creamy Avocado Dressing
Ingredients
Creamy Avocado Dressing
- 1 large Avocado From Mexico
- 1 garlic clove; roughly chopped
- 1/4 cup cilantro; roughly chopped
- 1 tbsp fresh lime juice (about 1 lime)
- 1/4 cup greek yogurt
- 1/2 cup low-fat milk (or buttermilk); +/- to desired consistency
- 1/4 tsp salt
- 1/4 tsp pepper
- Pinch of cumin
- Pinch of cayenne
Steak Salad
- 2 heads of leafy greens; washed chopped
- 2 cups roasted corn
- 2 roasted bell peppers; chopped
- 1 medium cucumber; chopped
- 2/3 cup chopped red onion
- 1/2 cup queso fresco; crumbled
- 2 medium Avocados from Mexico; cubed
- 1 lb carne asada ; chopped
Instructions
Creamy Avocado Dressing

In a food processor, add all the dressing ingredients but the milk.

On medium speed, blend all the ingredients and slowly add the milk to desired consistency.

Remove and place in a covered container and keep chilled until ready to use.
Steak Salad

Clean and chopped the lettuce greens and dry thoroughly.

Mix the dressing and the lettuce greens together until well coated.

Toss the steak, corn, cucumbers, peppers, onion, and avocado with the dressed greens.

Add the crumbled queso fresco to the top; serve and enjoy.
