Green Beans.

There is a rivalry in heart for my favorite veggie.

My love of Brussels sprouts is well documented on this site here, here and here. But there is an appalling lack of recipes featuring my other favorite vegetable…the mighty Green Bean.

A friend sent a message that she needed to make a side dish for a friend and needed recommendations.

Such a broad question for me so further inquiry was needed. We chatted and I felt my 3rd favorite green bean recipe would work perfectly for her. Tangy-Sweet Green Beans.

It got me wondering why have I not made this to share yet? It is truly a delicious recipe.

Two pounds of green beans seems like a lot, and it is. You can easily decrease to a pound and half, but once these are made, and you are taste testing for salt and pepper, compulsive eating will commence.

I ate so many between cooking and the photo shoot, it was rather pathetic and my lack of self control is appalling. Although the bright side, it’s not donuts or chocolate cake, so the waistline endured.

Tangy-Sweet Green Beans

Garden green beans tossed with onions, bacon, and sun-dried tomatoes and a splash of red wine vinegar.

Ingredients

  • 2 lbs fresh green beans; trimmed
  • 6 bacon slices, cut into 1-inch pieces
  • 1 shallot; chopped finely 1/4 cup red onion can be substituted
  • 2 oz sun-dried tomatoes; chopped
  • 2 tbsp red wine vinegar
  • 2 tbsp sugar
  • 1/4 tsp salt; +/- to taste
  • 1/4 tsp pepper; +/- to taste

Instructions

  1. Trim and wash the green beans; set aside. 

  2. Cook bacon and shallots/onion in a large pot, pan, or dutch oven over medium heat, stirring often, 6 to 8 minutes or until browned.
  3. Transfer bacon mixture to a plate, reserving drippings in pot.
  4. Cook the beans in the hot drippings, stirring often, 8 to 10 minutes or to desired degree of tenderness. 

  5. Last couple of minutes add the sun dried tomatoes.

  6. Stir in vinegar, sugar, and bacon mixture.
  7. Cook, stirring often, 3 minutes or until thoroughly heated.
  8. Season with salt and pepper to taste.

Recipe Notes

The green beans can be blanched in salted boiling water for 3-5 minutes, put in an ice water bath to stop cooking, then added directed to the cooking bacon and shallots/onions-Then sauté for only 3 minutes or so in the bacon mixture and the remaining ingredients.

    I’m always happy to find a recipe for jazzing up my vegetables. I almost always make my green beans very simply, with just a little butter, salt and pepper and they kind of get boring. I love all the ingredients you used here, I’m sure the bacon and the sauce gives these green beans such a wonderful flavor. Pinning to try very soon!

    Ahhh, I love green beans and somehow you made them even more amazing! I also love brussels sprouts, but I find that one does not get as much love (though I will admit, I would pick green beans first!)

    I love the combination of flavors in this dish – the sun dried tomatoes, shallots and bacon are such a great way to add zip to green beans (which I love but tend to be boring) and a sweet-and-tangy dressing is the perfect way to beldn all the ingredients.

    I’ve always loved fresh from the garden green beans. The flavor is so amazing. It makes me sad when people say the only green beans they’ve ever had are canned 🙁 It’s just wrong! lol. These look so yummy!

      I can jazz up canned, they are good to me, but fresh is nature’s perfection. Frozen…those are man’s cruel joke.

    These look wonderful to me. I actually make something quite similar so when I saw this recipe, I knew I had to stop by! I love the addition to bacon…I’ve never done that with mine! Yum!

    This is such a cool idea. I have always paired green beans with balsamic. I LOVE the fact that you used red wine vinegar. i would never have thought of that. It looks very inviting.
