Strawberry Salsa

After picking gallons of strawberries the other day, I have been eating them like they are candy…and they are infinitely better for you than candy.  However, I needed to come up with some actual dishes to showcase these delectable little critters.  It would be a rather dull post to just show you pictures of me eating them.

I love fruit salsas.  Look for many more from me this summer.  Peach, mango, pineapple, they are all in the works.  But one fruit salsa I have wanted to try and never had, was strawberry salsa.  Now was the perfect time with all these berries just lying around, begging to be eaten.

I opted to just make a simple, straight-forward salsa with no extra bells and whistles.  Berries, onions, peppers, and cilantro.  Perfect!

Strawberry Salsa

Ingredients

  • 3 cups fresh strawberries; diced
  • 2 jalapeños; diced
  • ½ red onion; diced
  • ¼ cup fresh cilantro; chopped
  • 1 orange bell pepper; diced
  • Salt/pepper; to taste
  • Juice of 1 lime (about 1 tbsp.)

Instructions

  1. Prepare the strawberries, jalapeños, onion, cilantro, and bell peppers and add them to a mixing bowl.  Mix the ingredients together. 
  2. Add salt and pepper to taste. 
  3. Pour the freshly squeezed lime juice over the mixture and stir. 
  4. Serve immediately or chill until ready to serve.

Recipe Notes

I deseeded and de-ribbed the jalapeños but for more heat, just dice the pepper.

The strawberries will “bleed” and all the other ingredients will take on a red hue the longer it sits around.

      Brigid, wow, that was fortuitous timing. I like that your son has a broad palate and an open mind. Most people turned their noses up at me when I said I wanted to make a strawberry salsa.

    This looks very tasty. We love creating our own salsas, but haven’t ventured out into adding fruits yet.

      Melisa, take the plunge, give a fruit a try. I will be making other fruity salsas this summer. If strawberry doesn’t strike your fancy, maybe one of the others will. 🙂

    I put salsa on just about everything. I love trying new salsas to spice things up. This would be great over grilled chicken or on fish tacos! Thanks for the inspiration-I love it. Pinning!
