Many years ago while an active participant in my former church, I was asked to cook lunch for several visiting church officials. The request came for something simple and easy, yet satisfying. That translated into a grilled chicken sandwich with various sides and cake. The sandwich was simple enough but I wanted a tangy sauce and felt honey mustard was just the right sauce to compliment the chicken’s seasoning.
Back then, I hated Dijon mustard. Course-grain spicy brown…never! I only ate yellow mustard. Ever since finding out it has no calories, it sky-rocketed to the top of my favorite condiment list. I think back then I just mixed honey and yellow mustard. It was tasty. I have played with it over the years and this is my favorite because it is the most simple of sauces, yet has a few layers of flavor.
This works great as a sauce for sandwiches, dippers for chicken or pork, or as a salad dressing.

2 tbsp mayonnaise
2 tbsp honey
1 tbsp Dijon mustard
2 tbsp yellow mustard
Mix all ingredients in a bowl. Serve immediately or chill until ready to use.
