I purchased a bag and left without having a single clue what I would make them, as there were far too many of them for me to just eat. Making a cobbler or some other dessert is not my forte as we’ve discussed many times. I suppose I could try.
Then I remembered I have a multi-blogger Mexican (Gluten Free) post coming up and an idea started to percolate. Sweet pork has been on my mind for quite some time and suddenly it all just gelled together. Sweet pork and plum salsa! Quite genius if I do say so myself.
Now while I made this plum salsa to go with my upcoming gluten free post, this salsa is wonderful enough to make on its own and just eat with your favorite chip, top a pork chop or grilled chicken. After I made the salsa, I lost count of how many chips I used scooping up this fantastic salsa. It was perfectly balanced with sweet and spice.
I’ve admitted time and time again how much of wimp I am where heat is concerned. So please, adjust the spice level to your own liking, more jalapeños, or serranos. Or go bold and add some habaneros. Some recipes are scared and must be followed, but this one is simple and should be adapted to suit your spicy heat needs.
Plum Salsa
Ingredients
- ¾ lb . plums; diced , stone removed
- 1 small bell pepper; finely diced
- 1 cup onion; finely diced
- 1 jalapeño; deseeded , deveined, finely diced
- 2 tbsp . cilantro; chopped
- 1 lime; juiced
- Salt/pepper to taste
Instructions

Mix all the ingredients together in a bowl.

Chill until ready to serve.
