I am not entirely sure how many times I have typed that sentence on this website, but if I were to hazard a guess, I’d say at least a dozen. My daughter got sick…again (we’ve both had three relapses since December), and when she is ill and home from school, life and work slow down to a snail’s pace, putting me even further behind.

Once she started feeling better and life got back to normal (insert laughter here as there is no such thing as a normal routine in our life) I had to get things done. Looming deadlines, recipes to be written and developed; dinner each night could have been something easy like take out or fast food, but with it being National Nutrition Month, I had to make dinner that was both nutritious and quick.

Enter the incredible Eat Smart Gourmet Vegetable Salad Kits. I can easily make a bag of salad and eat it for dinner, although the child might object. Plus I’ve been known to whip one up as an easy side dish for dinner. But that got me thinking, what if I made it the entree and enhanced it? Why not, I have done crazier things. Kale Chicken Noodle Bowls ~ Kale and Brussels sprout salad kit quickly stir-fried with chicken and rice noodles then tossed with the poppyseed dressing, cranberries, and pepitas ~ The Complete Savorist #EatSmartVeggies adThese salad kits, which are chef-inspired, are a blend of at least five super foods and all the additional goodies needed to make a tasty salad.  While I love my super foods as much as the next person, it’s always the goodies in the kits that excite me. I chose to take the Eat Smart Sweet Kale Salad Kit containing seven superfoods: kale, green cabbage, broccoli, Brussels sprouts, and chicory, do a hot quick stir fry, toss it with cooked chicken and brown rice noodles, then mixed in the kit’s goodie package of roasted pumpkin seeds, dried cranberries, and a poppy seed dressing.

I must say, this was one of my better ideas. The kale chicken noodle bowl cooked super fast, but I suppose using store bought rotisserie chicken helped with that. Elizabeth loved it (full disclosure, she did not like the chicory). The rest of my dinner guests had no issue the chicory, they devoured their plates. Sadly for me, there was not enough for leftovers. Kale Chicken Noodle Bowls

Ingredients

  • 1-12 oz pkg Eat Smart Sweet Kale Vegetable Salad Kit
  • 2 cups cooked and cubed chicken
  • 4 oz dried rice noodles; softened
  • 1 tbsp extra virgin olive oil

Instructions

  1. Place noodles in a large bowl and fill with HOT water.
  2. In a wok or large skillet over medium-high heat, add the oil.
  3. Pour contents of salad kit into the wok/skillet (not the salad dressing packet)
  4. Coat the vegetables in the oil and cook until the veggies begin to soften, 3-5 minutes.
  5. Add the chicken, mix well, cook an additional 1-2 minutes
  6. Drain the noodles and had slowly to the wok/skillet. Adding too many at one time will cause clumping.
  7. Once the vegetables, chicken and noodles are thoroughly mixed, add the salad dressing, just a bit at a time, stirring it in completely before adding more.
  8. After the salad dressing has been incorporated, add the cranberries and pepitas, Toss well and serve.
