Summer is whizzing by. School will be back in session before I know it (not that I’m complaining about that.) Elizabeth and I have been trying to enjoy our summer more than we have in the past. She’s at an age where she can do so many things, strollers nor naps are needed. We’ve been trying to at least weekly do something fun, different, educational, and even outdoorsy. Plus she’s been taking swim lessons. With all our outings and all my running around, I’ve been spending a lot more quality time with and in my car.
Luckily, Smith’s Grocery Store, part of the Kroger family of stores, has a loyalty program. They give me (and everyone else) one fuel point for every dollar spent towards fuel rewards, which really is needed due to living on a tight budget. It’s quite perfect and convenient really. I pop in to get all my groceries, taking advantage of all the great sales, then the money I spend on food translates to my saving on gas, helping us continue with all our summer activities. All I have to do is give the cashier my loyalty card (when I signed up eons ago, I was given two key-ring cards and one wallet card) or scan it myself at those nifty self-checkouts.
During my last trip to Smith’s for ingredients to make the Green Chile Chicken Torta, I wandered over into the bakery to start getting the items I needed to make my torta recipe. I love tortas. If you’re not familiar with a torta, it’s a Mexican sandwich. But not just any sandwich, it’s a sandwich that’s loaded with culinary culture in every bite, just like Vietnam’s bahn mi and Italy’s panini.
In mere minutes, I was able to grab everything I needed. And to be frank, I went with easy ingredients because I wanted to get these made and packed so Elizabeth and I could get on with our outing.
Between the items from the deli, bakery, produce department and canned goods, I had these assembled in no time. Convenient and still authentic, these green chile chicken tortas are AMAZING. I love my food, if I didn’t, I wouldn’t publish the recipe. But seriously, these were so good, I haven’t stopped thinking about them. And in the interest of full disclosure, they are messy. The type of messy that will have you licking your fingers and lips for every last bit, because it’s simply too good to be wiped away by a napkin.
Green Chile Chicken Tortas
Ingredients
- 2 avocados
- Pinch cayenne pepper; +/- to taste
- Pinch salt +/- to taste
- Pinch pepper +/- to taste
- 1-2 tbsp fresh squeezed lime
- 4 torta , bolillo, or other hard round rolls
- 1-16 oz can Simple Truth Organic™ refried black beans
- 3 1/2 tbsp Kroger brand diced green chile peppers (mild)
- 1 Wholesome@Home™ Garlic Herb Rotisserie Chicken; breasts removed , skinned and sliced
- 1-7 oz can whole green chiles; sliced flat
- 6 oz Kroger brand Monterey Jack Cheese; sliced
- 1/4 cup salsa verde/tomatillo salsa (4 tbsp, 1 tbsp per sandwich +/-)
- 1/4 cup sliced red onion
- 2 cups shredded iceberg lettuce
Instructions
Avocado Spread

Cut, pit, and remove the avocado from the skin.

Using a fork, smash to desired smoothness/chunkiness.

Add the cayenne pepper, salt, pepper, and lime juice, stir until well combined.

Taste, add any additional seasonings if desired.
Assembly

Slice the rolls, toast for extra structure under broiler until golden brown-optional.

Heat the refried black beans over medium heat and stir in the diced green chiles. Heating is optional, but does make it easier to spread on the bread.

Generously spread the black beans on the bottom bun.

Layer the sliced chicken over the beans.

Place one sliced whole green chile over the chicken.

Cover the top with Monterey Jack cheese.

Sprinkle the red onion over the cheese.

Generously spread the avocado spread over the top bun.

Add the lettuce on top of the onions.

Close the sandwich; serve immediately or wrap tightly in plastic wrap and refrigerate until ready to serve.
