I had no plans to cook. A phone call came in and I had about an hour to have lunch ready for six people. This is my type of pressure test. However, I hadn’t been to the store, and had next to nothing in the house. But I had eggs. I had a lot of eggs. Larry, from Larry’s Family Farm had just given me two dozen eggs, and I had exactly 14 left.
Making a simple egg salad was a definite possibility, but curried egg salad, well that sounded like a winner to me. A quick scan of my fridge and cupboard, I had everything needed to make this dish…in 45 minutes because I spent 15 starring in the cupboard and in the refrigerator/freezer trying to figure out what I could make.

Ingredients
- 14 hardboiled eggs; diced
- 2 celery ribs; finely diced
- 3 green onions; diced
- 1 tbsp . cilantro; chopped
- 3 dill pickle spears (or 1 whole pickle); diced
- 1 tbsp . dill pickle juice
- ½ tsp . prepared yellow mustard
- ? tsp. curry powder
- ? cup Greek yogurt (or plain yogurt)
- ? cup mayonnaise
- Salt/pepper; to taste
Instructions

In a small bowl, combine the yogurt, mayonnaise, pickle juice, mustard, curry powder, and cilantro. Set aside.

Evenly toss the eggs, celery, green onions, and pickles in a large bowl.

Salt and pepper the mixture to taste. Slowly fold in the yogurt mixture.

Serve on your favorite bread or bed of lettuce.

August 5, 2014 at 2:43 pmThanks Derik. It’s fun to play with traditional foods. Yogurt gives you less fat and more protein. I like to save my fat to have with my sugar in the form of chocolate and pastries. 🙂

I’m having trouble seeing the amounts for the curry powder, greek yogurt, and mayo–probably my browser–any suggestion on how much curry powder to start?

April 2, 2015 at 11:48 amThank you Kristen for bringing the missing ingredient amounts to my attention. That is a problem I have had with the zip list to easy recipe conversation, any 1/3 cup became a question mark, but only 1/3 cup….so odd.
