Corn and black beans go together in my mind like peanut butter and jelly. I can’t even begin to count the ways I have cooked these two ingredients together. But this is one of my most favorite pairings. It’s simple, and usually, simple things are the best.
When I saw the fresh ears of white corn, I was beside myself. I am not sure when I fell so hard for white corn versus yellow corn, but it’s a deep, intense love. Its sweetness goes perfect with black beans, particularly when fire roasted green chilies are invited to the party.That’s exactly what happened in this dish. I cut the kernels off the cob, blanched them, then I added some green chilies, black beans, herbs, spices, and fresh lime juice. Then I garnished with queso fresco, Mexico’s answer to Greece’s feta.

Ingredients
- 4 ears corn; kernels removed
- 2-15 oz . cans black beans; drained and rinsed
- 1-4 oz . can green chilies
- 1 tsp . chili powder
- Juice of one lime
- 1 tbsp . fresh cilantro; chopped plus more for garnish
- Salt/pepper to taste
- Queso fresco (optional)
Instructions

Remove the kernels from the cob and blanch them for 5 minutes in salted boiling water.

In a sauté pan, add the freshly blanched corn, black beans, green chilies, chili powder, lime juice, cilantro, and salt and pepper. Mix well.

Garnish with queso fresco and cilantro. Serve.
