Citrus Spice Balsamic Roasted Sweet Potatoes are sweet potatoes deliciously intensified by roasting them in a glaze made from citrus spice balsamic vinegar.
My love of balsamic vinegar is well documented both in my declarations and by how frequently I use it in my cooking.
At last count I have 16 bottles in my cabinet. My latest acquisition was a bottle of Citrus Spice Balsamic Vinegar.
I was attending a holiday media event for We Olive and Wine Bar in Salt Lake City earlier this month when they sampled this newest item in their family of balsamic vinegars. The best way to describe the flavor of this vinegar is if traditional balsamic vinegar and Christmas had a love child.
After the briefest of moments, or quoting from my favorite holiday movie, the “flashiest of flashes” on my lips, I knew I was bringing a bottle home with me. (Bonus points if you can name the movie).
And so it did, along with 3 of my colleagues/friends.
We each started talking about how we’d used the vinegar. Before we knew it, we had theorized an entire meal, from cocktails to dessert.
Balsamic Roasted Sweet Potatoes
The citrus spice balsamic vinegar definitely tasted like the holidays. Instantly I knew it would be WONDERFUL with sweet potatoes. I never wavered on what to make, just how.
Every way once could think to prepare a sweet potato came to mind. But ultimately, I had to go with roasting them, which would only enhance their natural sweetness.
I’m one of those who loves potato skins, doesn’t matter the spud I love them. I did trim the ends, and, using my vegetable peeler, removed a few questionable spots. If you have strong objections to them, peel them completely and continue on.
I made a quick reduction or glaze in my cast-iron skillet and then generously coated each thickly sliced coin-cut piece. Tossed them on a lined baking sheet and tossed them in a hot oven. I flipped them half way through, but not before giving them another quick basting.

Roasted Citrus Spice Balsamic Sweet Potatoes
Citrus Spice Balsamic Roasted Sweet Potatoes are sweet potatoes deliciously intensified by roasting them in a glaze made from citrus spice balsamic vinegar.
Ingredients
- 3 lbs sweet potatoes (about 3); sliced 1¼” thick
- ⅓ cup Citrus Spice Balsamic Vinegar
- 2 tbsp brown sugar
- 4 tbsp butter
- ⅛ tsp cayenne powder Just a PINCH; +/- to taste
- ½ tsp salt Divided: ¼ tsp / ¼ tsp
- ⅛ tsp black pepper +/- to taste
- 2 sprigs fresh rosemary
- 2 tbsp water *if needed for thinning the glaze
Instructions

Scrub potatoes clean and allow skins to fully dry before cooking; peel or trim away any undesired ‘blemishes’ in the skin.

Preheat oven to 400°F.

In large skillet over medium heat, bring the citrus spice balsamic vinegar and brown sugar to boil, stirring constantly until the sugar dissolves.

Reduce heat to medium-low and simmer until vinegar thickens slightly, about 2 minutes.

Add the butter, cayenne, salt, and pepper; stirring constantly until the butter melts.

Add the fresh sprigs of rosemary, working them in to the thickening glaze.

If sauce reduces to far or is too thick, add up to 2 tbsp. water, incorporating it in quickly.

While skillet is still on, add as many potatoes as can comfortably fit, and stir around, flip, and coating the sides.

Place the potatoes on a lined and rimmed baking sheet.

Repeat until all the slices are coated and on the baking sheet.

Set skillet aside with remaining glaze.

Sprinkle the potato tops with salt.

Bake until potatoes are tender, about 40 minutes in total.

After 20 minutes, remove from the oven.

Coat the top with reserved glaze; flip, coat and sprinkle with salt again, continue baking remaining 20 minutes or so.

Serve and enjoy.
