Balsamic Spinach Saute

A post a few days ago I joked about finding a way to combine balsamic vinegar and the spinach I had in the refrigerator. Well, I did it!

I went back and forth between making a sauté with balsamic or roasting the spinach and making a balsamic dip.  I ultimately went with the sautéing.  I’ll revisit the roasting idea another time.

Like I usually do, I rummaged around the produce bin to see what I had to work with.  Onion and bell pepper seemed simple enough, things we might all have at any given time.  Quick run through of the onion and pepper with my knife in the time it took the better to melt in the pan and I was ready to serve in less than 10 minutes.  This is my kind of dish.  Healthy, tasty, and fast.

5 oz baby spinach

½ onion; thinly sliced

1 small or ½ red bell pepper; diced

1 clove garlic; grated/minced

Salt and Pepper to taste

1 tbsp balsamic vinegar

1 tbsp butter or olive oil

In a sauté pan, heat the butter or oil over medium high heat.  Add the onions and bell pepper.  Stir for about 2 minutes until they begin to soften.  Add the garlic, salt and pepper.  Continue to cook for about another minute.  Add the balsamic vinegar and mix well into the onions and peppers.  Add the spinach.  Cook for 1 minute more as the spinach will wilt quickly and serve. 

Yes, really, that easy!
