I realize as a kid, I wasn’t always aware of all the adult things going on around me. But my family sat down to eat, at the table, every single night.

Of course there was always the occasional thing that arose, like a school event, sports practice that went late, and such, but by and large, evenings were quiet. Homework was done, TV was watched; we relaxed.

Now, I have to make it a point to sit down at the table to eat. The occasional school event is part of my adult life as a parent now. There are no sports being practiced…yet. But somehow our evenings are often packed with this or that.

I am not complaining, although a bit more table time together would be good, my little family is doing well and we are loving our life. I feel like I am writing an ad slogan someplace when I say ‘just because it’s fast, doesn’t mean it’s bad.’

But I believe that. Take these Tuscan Grilled Chicken Wraps as an example. I was able to assemble our dinner (and a couple to wrap up for lunch the next day) in about 10 or so minutes. I used one pan and one cheese grater…that’s it. I popped down to Walmart to get the standard pantry staples we’d run out of and a few items to make some quick and easy dinners.

The top of my shopping list: TortillaLand® Flour Tortillas, Tyson® Grilled & Ready® Chicken, and Wish-Bone® Italian Dressing. I knew exactly what I wanted to make.

Ever since the idea of adding beans to my pasta recipes, and other places I am unaccustomed to seeing them, was introduced to me, I fell in love with the flavor combo and the additional protein.Tuscan Grilled Chicken Wraps ~ Bursting with bold flavor, this wrap comes together in minutes and is loaded with protein and veggies ~ The Complete Savorist adFor our quick meals, I wanted them to be tasty and good for us as possible along with super quick and easy. The tortillas take just a minute or so to cook. I heated the chicken in the same pan as the tortillas, and those took just a few minutes on each side. While the chicken was cooking, I layered my tortillas with spinach, sun-dried tomatoes, and white beans (canned, drained and rinsed).

Once the chicken was ready, I placed it on top of all the goodies, generously coated everything in the Italian dressing (after giving it a good shake of course) and then liberally applied Parmesan cheese, and I mean LIBERALLY. I used Parmesan because it was in my fridge, but Romano would be equally delicious in this, if that’s your preference.

And voilà, Tuscan Grilled Chicken Wraps, ready to eat and loaded with ingredients that are not only delicious, but you can feel good about feeding your family.

Now a tip with the delicious Wish-Bone dressing. While it’s delicious as a salad dressing, it doubles beautifully as a marinade for chicken and pork (can’t vouch for beef, as I’ve never done it, but I’d be willing to stake my reputation on a steak). One of my early recipes here on TCS was a Bruschetta Stuffed Chicken that wades in pool of this delicious dressing.

Tuscan Grilled Chicken Wraps

Ingredients

  • 8 TortillaLand Flour Tortillas; cooked according to package directions ,
  • 1-22 oz pkg Tyson Grilled & Ready® Chicken strips; cooked according to package directions)
  • 1-15 oz can (or similar) white beans; rinsed and drained
  • 3-5 oz sun-dried tomatoes (whole, strips, or diced)
  • 3-4 oz fresh baby spinach; cleaned and dried.
  • 1/3 cup Wish-Bone® Italian Dressing +/- according to taste
  • 1/4-1/3 cup freshly grated Parmesan cheese

Instructions

  1. Cook the tortillas according to package directions and set aside.
  2. Start cooking the chicken strips according to package directions.
  3. Meanwhile, layer the tortillas with the spinach, sun-dried tomatoes, and white beans.
  4. As the chicken finishes cooking, add it to the tortilla on top of the other ingredients.
  5. Add the dressing over all the ingredients, as much or as little as desired.
  6. Generously sprinkle with Parmesan cheese.
  7. Tightly fold the tortilla together.
  8. Serve and enjoy or wrap tightly in plastic wrap and refrigerate for another day.
