As a cook and as a blogger, my list of things that I want to make is pretty much never ending. Roasted mushrooms have been on that list for quite some time now. In my grocery shopping endeavors this week I managed to pick up two packages of mushrooms accidentally at different stores. My meals for the week are roughly planned out―shocking, I know, and two packages of mushrooms aren’t necessary.
Today was one of those crazy days. It was over before I realized it. Work, family, appointments, the daughter’s preschool ‘graduation’… But I still needed and wanted to cook. Easy was the key. I decided that today was the day to finally make those roasted mushrooms. They became the perfect treat to snack on. And of course, I went with my personal trinity of flavors: balsamic vinegar, parmesan cheese, and oregano.

May 20, 2014 at 1:10 pmI’ve never had roasted mushrooms before, and I just recently started eating them. My Mom added shitake mushrooms to this beef & broccoli recipe and it was sooooo good. We looked it up later, and learned that they are incredibly healthy.
