Roasted Mushrooms

As a cook and as a blogger, my list of things that I want to make is pretty much never ending. Roasted mushrooms have been on that list for quite some time now.  In my grocery shopping endeavors this week I managed to pick up two packages of mushrooms accidentally at different stores.  My meals for the week are roughly planned out―shocking, I know, and two packages of mushrooms aren’t necessary.

Today was one of those crazy days.  It was over before I realized it.  Work, family, appointments, the daughter’s preschool ‘graduation’… But I still needed and wanted to cook.  Easy was the key.  I decided that today was the day to finally make those roasted mushrooms.  They became the perfect treat to snack on.  And of course, I went with my personal trinity of flavors: balsamic vinegar, parmesan cheese, and oregano.

Roasted Mushrooms

Ingredients

  • 1-16 oz pkg sliced mushrooms
  • 2 tbsp extra virgin olive oil
  • ½ tsp granulated garlic
  • ¼ tsp black pepper; +/- to taste
  • ½ tsp dried oregano
  • ¼ tsp dried sage
  • ¼ cup parmesan cheese , finely grated, plus a bit more
  • 1 tbsp balsamic vinegar
  • Kosher salt; to taste
  • Fresh oregano; optional to garnish

Instructions

  1. Preheat the oven to 375º
  2. Add all the ingredients to a zip-close bag. 
  3. Seal and gently shake/toss the contents, coating all the mushrooms.
  4. Spread them in a single layer on baking sheet coated with cooking spray. 
  5. Cook for 15 minutes or until they begin to brown. 
  6. Remove them from the oven and dust with reserved parmesan cheese and fresh oregano, if using. 
  7. Serve immediately.

    I have never tried roasted mushrooms before but this looks like it tastes delicious.

      Shitake would be very interesting roasted. I haven’t tried that, but I just might have to. I love shitake mushrooms.

    I’ve never had roasted mushrooms before, and I just recently started eating them. My Mom added shitake mushrooms to this beef & broccoli recipe and it was sooooo good. We looked it up later, and learned that they are incredibly healthy.

      I have only been eating mushrooms for a few years. I hated them forever! Now, I can’t seem to not cook with them. After onions and garlic, I think I use them in most dishes.

    I really like mushrooms but I have never had them roasted before this is something I will have to try out.

      They are quick and easy. Start to finish, 20 minutes.

    My spouse and I consider a plate of roasted mushrooms to be a mini date night at home. These look awesome–lucky you for turning an extra carton of produce into such a winner!

    I love mushrooms, but haven’t roasted them in a while, so will have to try this. And the balsamic vinegar addition is perfect!
