Mangia-Italian Dinner Night ~ Garlic Cheese bread, a hearty salad, and easy, yet delicious chicken parmesan over linguine make dinner special.We all know my love of Italian food is deep, in fact, it is in my blood. Anything slathered in red sauce is my go-to comfort food. And when I want a special meal, more times than not, it is Italian food.
Some of my best memories are sitting around my family table, whether as a kid or as an adult with those I love, sharing good food, some wine, and a whole lot of laughter.
Holidays and Sundays are great for gathering around the table but unfortunately, the hustle and bustle of the week can lead to rushed dinners or dinners on the go. Dinners should be about reconnecting with those we love, whether with our children, our spouses/partner/SO, to our friends, and our extended family.Somehow the stars aligned, and I got to have dinner with two of my best friends. Their kids had plans as did Elizabeth (yes, my kid has a hopping social life at times). Now we flirted with the idea of going out to dinner, but we decided a night in was best. We’ve been known to be a bit loud and very garish in our humor after some wine. Plus, have you been outside…baby it’s cold out there.
Staying in was a great call. As predicted, the jokes flew, the wine was guzzled, and the food was devoured. It’s nights like these that truly make me happy. Dinner looked super fancy, but was probably the easiest thing I had made in the last two weeks.
Bertolli Chicken Parmigiana was so easy to make: open the box, pull back the film, toss it in the oven, and wait for the timer to ding. While the chicken cooked, I was able to assemble everything else, or disassemble, in the case of uncorking the wine.
I got to pass several hours, kid free, with two people I love and respect (yes, respect is still there, even after some of the jokes.) And best of all, it was a weekday! I rarely get weekday fun like this. Memories were made! Mangia Italian Dinner Night.
Ingredients
Garlic Cheese Bread
- 1 loaf French bread
- 1 stick butter; softened (not melted)
- 1/4 cup finely grated Parmesan cheese
- 1 tsp granulated garlic
- 1 tsp dried parsley
- 6 oz grated Monterrey Jack cheese
Salad
- 4 cups mixed greens
- 1/8 prepared Italian dressing
- 1/4 cup chopped thick sliced hard salami
- 1/4 cup cubed mozzarella cheese or fresh mozzarella balls
- 1 small tomato , sliced
- 6 peperonici peppers
Main
- 1-17.5 oz package Bertolli Chicken Parmigiana
- 8 oz linguine
- 1 bottle red wine
Instructions
Garlic Cheese Bread

Place the soften butter in a bowl and mix in the garlic, parmesan cheese, and parsley.

Slice the loaf in half and equally spread the butter on both halves.

Sprinkle cheese evenly over the butter on both loaves.

Place under the broiler and WATCH. Once golden brown, remove. Careful, it will burn quickly.
Salad
-
Wash and dry the greens and place in a large bowl.

Dice the cheese, tomato, and salami and add it to the bowl.

Toss the salad with the dressing and plate.

Garnish with the peperoncini peppers.
Main
-
Cook the Bertolli Chicken Parmigiana according to package directions.

Cook the pasta according to package directions

Open the wine and allow it to breathe.

Plate the pasta, and top with the cooked chicken parmigiana.

Plate the salad.
-
Slice the garlic bread.

Pour the wine.

Serve and Enjoy.
