My spur-of-the-moment breakfast a week or two ago left me wanting more. It also left me wanting ham. But ham is a personal favorite. I loved the sandwich, which is why I shared it, but I knew I could make it even better. My grandma is visiting and she commented on it. I suggested making it again, but this time with ham, one of my true loves in life. She readily agreed to test any food placed before her.
Ham made this terrific sandwich delectable. The addition of a croissant with its buttery, flakey texture was also a good move as well. Grandma was very happy.
We had this for breakfast, but was so tasty, I’d eat it for lunch or dinner!
Ingredients
- 4 medium croissants; sliced
- 6 large/XL eggs (8 medium)
- 4 slices of deli ham; thick
- 4 slices smoked Swiss cheese; thick
- Apricot jam
- Butter
- Salt/Pepper; to taste
Instructions

In a pan, heat the deli ham on both sides; set aside.

Beat the eggs in a bowl with desired amount of salt and pepper.

In a small skillet, add the butter and allow it to melt.

Add the eggs and allow them to complete cook on one side before flipping them over.

Then flip them over and allow them to finish cooking through. Cut into 4 patties.

Layer the cheese on the bottom piece of the croissant.

Place the ham on the cheese, then the egg.

Spread the apricot jam on the underside of the croissant top.

Replace the top of the croissant.

The jam will soften and "melt" as it comes in contact with the hot egg and ham.

Cut and enjoy.
