Power Breakfast

Breakfast and I have always had a rocky relationship.  But we all know it is the most important meal of the day.  Typically, my breakfast consists of coffee and protein.  The form of that protein is constantly different.  It could be eggs, leftovers from the previous night’s dinner, beef jerky.  But occasionally when I decide to go the more traditional route, yogurt, particularly Greek yogurt is my go-to breakfast.  It is very high in protein, non-fat, and easy.

When I made the strawberry coulis, I knew I could use it in a wide array of ways.  But I think my most favorite employment was just with my Greek yogurt.  For the purposes of the average breakfast eater, I added some granola this morning.  The tang of the yogurt, the crisp of the granola, and the fruity sweet of the coulis was the perfect, near dessert like, meal.

Ingredients

  • Picture
  • ½ cup Greek yogurt
  • ½ cup granola
  • 2 tbsp . strawberry coulis

Instructions

  1. Add the granola to the bowl, then the Greek yogurt.
  2. Spoon the strawberry coulis over them and enjoy.

I used packaged granola, but here are four fabulous recipes if you’d like to make your own.

Coffee with us 3 has a nutty-licious version of granola providing lots of extra protein and fiber.
Yummy Northwest has a nutty and dried fruit version of granola that is guaranteed to tickle your taste buds
Bakesinslippers has a tantalizing cherry almond granola that would provide tasty contrast to the sweet strawberry coulis.
The Chef Next Door has provided us with a walnut apricot granola that surely please even the pickiest of granola eaters.
