Creamy White Wine Chicken and Rice ~ The Complete SavoristChicken and rice is one of the ultimate comfort foods.  White wine classes it up a bit and cream makes it decadent.  Toss in the veggies to keep it healthy and you have a quick but delicious meal on your hands.

The inspiration for this meal was 1 part desperation (dinner needed to get made), 1 part inspiration (what to do with that no longer drinkable wine in the fridge) and 1 part craving (I really wanted rice).

I honestly believe that it’s time like these that some of the best meals are created. A little bit of prep, a bit more time in the pan, rice set to cook in the rice cooker, dinner was shaping up to be delicious and fairly easy. Creamy White Wine Chicken & Rice

Ingredients

  • 6-8 Chicken thighs; sliced
  • 1 red bell pepper; diced
  • 1/2 medium onion; diced
  • 3 cups cooked rice (I used a rice blend with 3 types of rice)
  • 1 cup white wine
  • 1/2 cup broth
  • 1 tsp . herbs de provence
  • 3 garlic cloves; grated/minced
  • 1/2 cup cream
  • 1 cup peas
  • Salt/pepper; to taste
  • Extra virgin olive oil
  • Parmesan cheese (optional)

Instructions

  1. Season the chicken thighs on both sides
  2. In a pan, add olive oil and heat over medium-high heat
  3. Sear the chicken on both sides, getting nice color
  4. Add the bell pepper and onion, cook for about 2 minutes or until onions and peppers begin to soften
  5. Reduce heat to medium
  6. Add the wine, broth, garlic, herbs and s/p. Cook for about 5-7 minutes or until the chicken is cooked through
  7. Add the rice, cook an addition 3-5 minutes or until most of the liquid is absorbed
  8. Add the peas and cream, stir gently
  9. Taste for seasoning, add any needed salt or pepper
  10. Top with optional parmesan cheese

    Chicken and rice are my comfortable food too! The cream idea is great. I only used the sauce on chicken pasta, but never thought I can use on rice. Thanks for sharing! 🙂

    Mmm, I love the concept of this, much like a mock risotto! I’ll definitely be giving this recipe a try – rice and chicken are staples in our house, but I run out of ideas sometimes!

    I adore this. I love simple chicken recipes. I also really like that this recipe is made with chicken thighs. They have more flavor and are easier on your budget. I love cooking with wine. Pinning this!
