Sloppy Joes

One of the things I love about sloppy joes (and meatloaf too, for that matter) is you can simply add in whatever things you have on-hand that need to get used up.  While staying at a friends’ place to take care of their kids while they were in Florida (don’t even get me started at the injustice of them on a beach in January while we are left behind in sub-zero weather!) I had been cooking with the few food items I brought along and what they had on hand.  We had a night of games planned and I wanted to make something easy, tasty, and kind of fun.  Sloppy Joes fit the bill perfectly.  Sadly, games nights often equal copious amounts of junk food so all of our side dishes with the meal fit into that category. At least the beef was 93% lean!

2 pounds lean beef

1½ cups ketchup

½ diced onion

½ diced green bell pepper

½ cup diced mushrooms

2 cloves garlic; grated or minced.

Salt and Pepper; to taste

Olive Oil

Hamburger buns

In a skillet, sauté onion and bell pepper in olive oil, about 3 minutes, add mushrooms, sauté another 2 minutes.   Remove from pan and set aside.  In the same pan, add crumbled ground beef.  Add garlic, salt, pepper.  About half way through the cooking process, add reserved veggies.  Mix thoroughly.  Remove any fat.  Add ketchup and any additionally needed salt and pepper.  Serve on hamburger buns.
