Greek Inspired Breakfast Casserole ~ Brunch recipes don’t have to be hard. This simple breakfast casserole is elevated with Greek inspired ingredients like feta cheese, spinach, and sun-dried tomatoes.
Brunch, that delightful meal somewhere between breakfast and lunch time. It’s my personal favorite because I am not a morning person. Weekdays, I live on coffee until the brunching hour and weekends, well, I sleep until the brunching hour, when the child permits, of course.
To add to its charm, the food items centered around brunch can run the gamete between traditional breakfast items of eggs and pancakes, to lunching options like meat sandwiches and other savory items. Thus who needs to pick to one meal type.Brunch became a thing towards the end of the 19th century in England, born from the British upper class. Wealthy families would give their servants a day off on Sunday’s after having them prepare a buffet style meal that they could nosh on all day.
Today, brunch is still a popular meal on weekends, as people might want sleep a little longer (like me), but it is also a meal that brings families and friends together, almost in a celebratory fashion.
The fact that Simply Potatoes® are made with real ingredients and are so easy to prepare makes them a go-to for me when making breakfast or brunch items, especially since they are such a versatile ingredient.Even on a rushed school day, having them on hand allows me to make a hearty breakfast for my daughter without having to peel or shred potatoes.
Easy Brunch Idea
I made a Greek Inspired Breakfast Casserole, using fresh farm eggs, Simply Potatoes Hash Browns (i.e. shredded potatoes), spinach, oregano, sun-dried tomatoes, and feta cheese. This dish was hearty enough for meat-eaters and satisfying to egg-eating vegetarians.
Plus, this brunch dish makes getting my daughter to eat her veggies a bit easier (although I do turn it upside so they’re on the bottom–Hey, whatever trickery works, use it).
Greek Inspired Breakfast Casserole

Ingredients
- 1 tsp olive oil
- 1 shallot; finely diced
- 3-4 cloves garlic; plump, minced/grated
- 1 cup sun-dried tomatoes; diced not packed in oil
- 11 oz baby spinach, trimmed
- 12 large eggs
- 20 oz Simply Potatoes® Hash Brown pkg
- 1 tsp salt; divided
- 1/2 tsp black pepper; divided
- 1 tsp oregano; dried (1 tbsp fresh)
- 1 cup feta cheese; crumbled
- 1/2 cup fresh parmesan cheese; grated
Instructions

Preheat oven to 375° and spray a 9 x 13 (or equivalent) dish with cooking spray.

Heat a large pan over medium-high heat, add the oil.

Sauté the shallot and garlic for 3-5 minutes until it softens and begins to become translucent.

Reduce heat to medium-low, add sun-dried tomatoes, cook for 2 minutes to soften.

Add cleaned and trimmed spinach and sauté until bright green and wilted, about 1-2 minutes. Turn off heat, set aside.

Open the bag of Simply Potatoes, add 1/2 tsp salt and 1/4 tsp black better to the potatoes, coat/toss well. (This can be done in the bag, in a bowl, or a zip-seal bag).

Arrange the seasoned potatoes evenly in the bottom of the dish.

In a large bowl, whisk together eggs, salt, pepper, and oregano.

Stir in the spinach mixture and cheese into the eggs.

Pour mixture over the potatoes.

Bake in oven until eggs are fully cooked through, about 30-35 minutes. Slice and serve.
Recipe Notes
This does reheat nicely.
