And once school starts that means it’s tailgating and game day season. And when it’s tailgating and game day season, that means lots and lots of gatherings with some of the best food.

I grew up in an avid football-loving house. When I was married, football and basketball became the sports to watch around here. Now, it seems I’ve picked up baseball from a friends influence. As summer creeps into fall, we finish up baseball season which blends into football season, then as footballs season winds down, we have basketball. And of course, the cycle repeats.

We get months and month of yelling at the TV screen, heated passions as bad plays or calls are made, and wounded egos when your team is bested by the rival. Conversely, months and months of cheering and screaming (Go! Go! Go!), great plays or calls made, and swollen pride in your teams’ field prowess. I decided on Bar-B-Q chicken sliders would be the perfect tailgating or game day snack. But my mind wouldn’t stop thinking about that Green Chile Anytime Sauce.

Recipe for Fresh Corn on the Cob

I was at the store buying what I needed for the sliders when I spied a heaping pile of fresh locally grown corn. Recipe plans changed instantly. I quickly picked out some ears of the locally grown deliciousness and a few other items for my revamped idea. This sauce is not for the faint of heart, though. A bold mix of Hatch green chiles, garlic, and lime give this sauce an authentic Southwest kick of heat. But not at first. You instantly taste the unmistakable Hatch chile flavor, then comes the heat at the end. Bold and Spicy.

Using Cotija cheese, with its cooling properties, is the perfect companion to Stubb’s Green Chile Anytime Sauce. I added a bit of cilantro to pull the whole dish together. Delicious and messy, but absolutely perfect for tailgating, especially when you’re bound to get hot under the collar at least once during the game.

My recipe for Green Chile Corn is utterly simple, allowing you to assemble it while tailgating, having done all the prep at home. Of course, Green Chile Corn can be assembled right at home when hosting your own game day party. Green Chile Corn

Green Chile Corn ~ Take that fresh corn on the cob and turn it on its ear by rolling it in spicy green chile sauce and crumbled cotija cheese.

Ingredients

  • 6-8 ears (or any really) fresh corn, husks and silks removed
  • Salt
  • 2-3 tsp white sugar
  • 1-12 oz jar Stubb's Green Chile Anytime Sauce
  • 1/2 cup cotija cheese; crumbled
  • 1/4 cup chopped cilantro

Instructions

  1. Remove the husks and silks from the corn.
  2. Bring a large pot of water to boil.
  3. Once the water is boiling, add the salt, a generous amount.
  4. Add the sugar.
  5. Place the corn into the boiling water, cover the pot, and allow the water return to a full rolling boil.
  6. Turn off the heat and keep the pot covered, allowing the corn to 'steep' for about 5 minutes.
  7. While the corn steeps, place the crumbled cheese on a plate and pour the sauce onto another.
  8. One by by, remove the corn from the post, shaking off any excess water, add corn cob holders (if using) and roll it in the sauce.
  9. Once the corn is throughly coated in the sauce, roll it in the cheese.
  10. Sprinkle the corn with the chopped cilantro and serve immediately.
  11. Remaining corn warm can be kept in the water for about 10 minutes without it becoming tough or overcooked.

    I’ve been living my whole life with buttered, salted and peppered corn. I’ve never thought to dress it up like this. Tasted divine!
