Caramel Butterscotch Cookie Bars

Ingredients

  • 2 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs; room temp
  • 1/2 tsp vanilla
  • 1-11 oz package butterscotch chips
  • 7 tbsp caramel sauce; divided 2:2:3
  • Cooking spray

Instructions

  1. Preheat oven to 350°
  2. Mix/sift the dry goods together in a bowl and set aside.
  3. Using an electric mixer, cream the butter and sugars together on medium high.
  4. Once combined, add the eggs, one at a time, making sure the first is fully incorporated before adding the next.
  5. Add the vanilla and mix.
  6. Slowly add the dry ingredients, a bit at time, until the dough has been completed formed.
  7. Pour in the butterscotch chips and mix until well combined.
  8. Mix in 2 tbsp caramel sauce to the dough.
  9. Line a 9x13 pan with parchment paper and apply the cooking spray.
  10. Press half the dough into the pan, taking care to reach the corners as best as possible.
  11. Drizzle 2 tbsp caramel over the pressed dough.
  12. Add the remaining dough to the pan, again taking care to reach the corners.
  13. Drizzle the final 3 tbsp caramel sauce over the top.
  14. Bake for approximately 20 minutes or until they have reached the desired doneness.
