Prosciutto Wrapped Parmesan, Pears, and Greens

Ingredients

  • 2-3 oz pkg Prosciutto
  • 1 red or bartlett pear; thinly sliced
  • 12-15 slices parmesan cheese; thin curls

Dressed Greens

  • 5 oz mixed greens; cleaned and dried
  • 3 tbsp extra virgin olive oil
  • 3 tsp red wine vinegar
  • 1 tsp fresh lemon juice
  • 1/2 tsp dijon honey mustard
  • fresh cracked black pepper; to taste

Instructions

  1. Wash and dry the greens and place in a bowl.
  2. Whisk together the oil, vinegar, lemon juice, dijon honey mustard, and black pepper until fully emulsified.
  3. Toss the greens in the dressing.

Assembly

  1. Layer several leaves of the greens.
  2. Place the slice of pear and parmesan together in the center of the bundle of greens.
  3. Roll the greens around the pear and cheese and place on one end of a prosciutto slice.
  4. Tightly roll the prosciutto around the bundles of greens and place on the serving platter.
  5. Cover tightly and keep refrigerated until ready to serve.

Recipe Notes

Each packet of prosciutto varies in quantity.
