Ingredients

  • 1-17 oz Pkg Farm Rich boneless Barbecue Chicken bites
  • 1-8 oz pkg of cheddar cheese
  • 5-6 leaves of romaine lettuce
  • 15 black olives
  • 15 cherry or grape tomatoes
  • Bbq Ranch Dressing
  • 15 skewer sticks

Instructions

  1. Cook the chicken according to package directions.
  2. While the chicken is cooking, prepare the reminaing ingredients.
  3. Drain the olives.
  4. Rinse the cherry tomatoes.
  5. Cube the cheese in order to have 15 large cubes (or however many skewers you can get from your box.)
  6. Clean and dry the romaine lettuce leaves and then cut into strips, about an inch-inch and a half in width. The amount of strips you can get from each leaf will vary.
  7. Once the chicken has been tossed with the sauce packet, and cool enough to handle, begin to assemble the skewers.
  8. Bundle one romaine piece and pierce through the vein, slide it down 3/4 of the skewer.
  9. Add one piece of chicken, coming to stop at that romaine leaf.
  10. Add another bundle of romaine.
  11. Push a cube of cheese onto the skewer and then another romaine slice.
  12. Add an olive, then another romaine slice.
  13. Finally push the tomato through the top of the skewer.
  14. Either drizzle the bbq ranch dressing or serve it along side the skewers for dipping.

Recipe Notes

I do not recommend using the microwave directions for these, cook in your oven for best results.
