-
Cook the chicken according to package directions.
-
While the chicken is cooking, prepare the reminaing ingredients.
-
Drain the olives.
-
Rinse the cherry tomatoes.
-
Cube the cheese in order to have 15 large cubes (or however many skewers you can get from your box.)
-
Clean and dry the romaine lettuce leaves and then cut into strips, about an inch-inch and a half in width. The amount of strips you can get from each leaf will vary.
-
Once the chicken has been tossed with the sauce packet, and cool enough to handle, begin to assemble the skewers.
-
Bundle one romaine piece and pierce through the vein, slide it down 3/4 of the skewer.
-
Add one piece of chicken, coming to stop at that romaine leaf.
-
Add another bundle of romaine.
-
Push a cube of cheese onto the skewer and then another romaine slice.
-
Add an olive, then another romaine slice.
-
Finally push the tomato through the top of the skewer.
-
Either drizzle the bbq ranch dressing or serve it along side the skewers for dipping.
