Asian-Inspired Cucumbers and Peppers with Peanuts

  • 2 cucumbers; halved and sliced
  • 2 carrots; sliced
  • 2 red bell peppers; sliced
  • 1/2 medium white or red onion; sliced
  • 1/2 cup fresh cilantro; chopped
  • 1 cup peanuts; in pieces


  • 1 tsp garlic chili sauce +/- to taste
  • 2 tbsp sweet chili sauce +/- to taste
  • 1/2 cup rice vinegar
  • 1/8 tsp black pepper


  1. Slice the veggies and place them in a large bowl.
  2. Add the cilantro, stir well.
  3. In a separate bowl, whisk the marinade ingredients together.
  4. Pour the marinade over the veggie.
  5. Cover the veggies and shake the bowl, allowing the marinade to fully coat all the vegetables.
  6. Chill for 15 minutes.
  7. Remove from fridge and shake, forcing the liquid to mix into all the vegetables again.
  8. Repeat this until the salad has marinated for an hour.
  9. Once ready to serve, drain off the remaining liquid.
  10. Toss the salad with the peanuts.
