Mini Corn Dogs

Ingredients

  • 1 pkg hot dogs

Cornbread batter

  • 1 cup flour
  • 1 cup cornmeal
  • 3/4 cup white cheddar; finely grated
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 3 tbsp honey
  • 1 egg
  • 1 1/2 cups milk
  • Oil for frying

Instructions

  1. Cut each hot dog into thirds

Batter

  1. Combine the flour, cornmeal, salt, baking powder, and cheese, set aside
  2. In another bowl, whisk the egg, milk, and honey.
  3. Slowly stir whisk in the wet ingredients into the dry ingredients.
  4. Spear each hot dog.
  5. Dip each hot dog in the batter, lift and allow excess batter to drip off.
  6. Place each battered hot dog into a large pot of heated oil (350 degrees).
  7. If they are not fully submerged, rotate in the hot oil.
  8. Allow to cook 2-3 minutes, but take care to not burn them if the oil exceeds 350 degrees.
  9. When cooked, place on a paper towel lined plate, so the excess grease is removed.
  10. Serve with your favorite dipping sauce.
