Quick Brussels Sprouts and Red Pepper Sauté ~ A side dish that comes together in mere minutes that compliments any entree.


  • 10 oz . Brussels sprouts; trimmed and quartered
  • 1 red bell pepper; sliced
  • 1/2 medium onion; diced
  • 1/2 tbsp butter
  • 1 tbsp extra virgin olive oil
  • 1/8 tsp salt/black pepper; to taste +/-


  1. In a large sauté pan, add the butter and oil and set to a medium-high heat.
  2. Once hot, add all the vegetables and leave undisturbed for a few seconds, allowing each to get a bit of a sear to them.
  3. Then stir frequently, allowing to cook for 3 minutes.
  4. Add the salt and pepper, continue to cook an additional 3 minutes, taste for seasoning, add more if needed.
  5. Cook 2 more minutes or until the vegetables have reached the desired doneness.
  6. Serve and enjoy.
