Thai Beef Noodles

Ingredients

  • 1 pound beefsteak; sliced
  • 3 tbsp lemongrass
  • 1 tsp dried ground ginger
  • 3 garlic cloves; minced/grated
  • 2 tbsp high heat oil
  • 1 red bell pepper; sliced
  • 1 green bell pepper; sliced
  • 1 yellow bell pepper; sliced
  • 6 green onions , sliced
  • 1 cup carrots , chopped
  • 6 oz . green beans; trimmed
  • 3 tbsp oyster sauce (use Gluten Free oyster sauce to make this dish GF)
  • 1/8 tsp brown sugar
  • 1/8 tsp black pepper
  • 1/3 cup salted peanuts; broken
  • 1/4 cup cilantro; chopped
  • 12-14 oz pkg rice noodles; softened (see package directions

Instructions

  1. In a large pan or a wok, heat the oil over high heat.
  2. Add the lemongrass, garlic, and ginger, stir.
  3. Once fragrant (just a few seconds), add the beef, cook for 2 minutes.
  4. Add the bell peppers and green beans and cook for 4-5 minutes or until the veggies reach the desired doneness.
  5. Add the oyster sauce, brown sugar, cilantro, and peanuts. Mix well. Cook together for another 2 minutes.
  6. A handful or scoopful at at time, add the softened rice noodles. Do not add the all the noodles at once because they will clump and you won't be able to get them apart easily.
  7. Serve and enjoy.
