Clean the potatoes and poke holes all around the potato with a fork.

Microwave on high for 5-6 minutes, depending on how large the potatoes are.

Once done, remove from the microwave and allow to cool slightly before handling.

While the potatoes are cooling, prepare the veggies and other ingredients.

Heat a large skillet/pan on medium high heat.

Once the pan is hot, add about two tablespoons of olive oil and add the onions and bell peppers.

Stir them around and add the garlic.

Add a bit of salt and pepper.

Sauté for 3-4 minutes or until they begin to soften.

Add the sausage and cook for another couple of minutes.

Cube the potatoes and add them to the pan.

Add more olive oil if needed.

Cook for an additional 5 minutes or until the potatoes are thoroughly cooked and the sausage is heated through.

In a small bowl, add the sour cream, paprika, oregano, salt, and pepper.

Once the potatoes are fully cooked and the meat is warmed through, remove from heat and fold the sour cream sauce into the pan.

Taste for seasoning and add any additional salt and pepper as needed.

Serve immediately.
