Quick Pizza Sauce and Getting Started

Ingredients

  • 2 tbsp extra virgin olive oil
  • 4 plump garlic cloves; grated/minced
  • 1-29 oz can tomato puree
  • 1 onion; quartered
  • 3 stalks celery; chopped
  • 3/4 tsp dried oregano
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt;  +/- to taste
  • 1/4 tsp black pepper;  +/- to taste
  • Pinch of sugar

Instructions

  1. In a large pot, add the olive oil and heat over medium high heat.
  2. Once the oil is heated, add the garlic.
  3. Stir constantly, do not allow it to burn.
  4. Add the dried herbs, once they become aromatic, in less than 30 seconds, add the tomato puree.
  5. Stir well making sure all the seasonings are incorporated into the puree.
  6. Add the salt and pepper.
  7. Allow it to heat through and taste.
  8. Add the sugar, onions, and celery and allow the sauce to cook for 20 minutes on a low simmer.  Stir occasionally.
  9. Taste for seasoning, more salt and pepper may be needed.
  10. Once the sauce has cooked for at least 20 minutes (but can cook longer,) remove the onion and celery pieces.
  11. Use a spoonful or two at a time for personal size pizzas.
  12. This makes enough sauce for 15 personal-sized pizzas as featured in this series.
