Chicken Filling

Ingredients

  • 11/2-2 lbs cooked shredded chicken OR 1 rotisserie chicken , deboned/shredded
  • 1-15 oz can tomato sauce +/- , but probably less
  • 3/4 cup low-sodium chicken broth +/-
  • Salt and pepper to taste
  • 1/4 tsp cumin
  • 2 garlic cloves; grated/minced
  • 3/4 tsp chili powder +/-

Instructions

  1. In a large heated skillet, add chicken.
  2. Add the seasonings and most of broth, mix well.
  3. Add the tomato sauce.
  4. Taste. If the mixture is dry you can add more broth &/or tomato sauce, then seasonings until is at your perfect consistency.
  5. Heat thoroughly. Serve as desired.
