Add the olive oil to a large skillet or sauté pan over medium-high heat.

Once hot, add the corn and sauté.

If using fresh corn, sauté for 7 minutes, or until the kernels are soften and cooked.

If using frozen, sauté for 3-4 minutes.

Once the corn is cooked, add most of the green onions (reserving a few for garnishing), lime juice, and the seasonings. Mix well.

Remove from heat, add the mayo and then the cotija cheese.

Garnish with the remaining green onions.

This tastes great served warm or chilled.
