Ingredients

Creamy Avocado Dressing

  • 1 large Avocado From Mexico
  • 1 garlic clove; roughly chopped
  • 1/4 cup cilantro; roughly chopped
  • 1 tbsp fresh lime juice (about 1 lime)
  • 1/4 cup greek yogurt
  • 1/2 cup low-fat milk (or buttermilk); +/- to desired consistency
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Pinch of cumin
  • Pinch of cayenne

Steak Salad

  • 2 heads of leafy greens; washed chopped
  • 2 cups roasted corn
  • 2 roasted bell peppers; chopped
  • 1 medium cucumber; chopped
  • 2/3 cup chopped red onion
  • 1/2 cup queso fresco; crumbled
  • 2 medium Avocados from Mexico; cubed
  • 1 lb carne asada ; chopped

Instructions

Creamy Avocado Dressing

  1. In a food processor, add all the dressing ingredients but the milk.
  2. On medium speed, blend all the ingredients and slowly add the milk to desired consistency.
  3. Remove and place in a covered container and keep chilled until ready to use.

Steak Salad

  1. Clean and chopped the lettuce greens and dry thoroughly.
  2. Mix the dressing and the lettuce greens together until well coated.
  3. Toss the steak, corn, cucumbers, peppers, onion, and avocado with the dressed greens.
  4. Add the crumbled queso fresco to the top; serve and enjoy.
