Pappardelle with Beef and White Beans ~ Fresh pappardelle pasta tossed with lean beef, white beans, and sauce for a dinner ready in 20 minutes.

Ingredients

  • 1 lb fresh pappardelle (dried works too)
  • 1 tbsp extra virgin olive oil; plus more for drizzle
  • 1/4 cup chopped celery (~1 rib)
  • 1 lb lean ground beef
  • 1-15.5 oz can white beans; drained and rinsed
  • 1-24 oz jar Bertolli Olive Oil and Garlic sauce
  • Salt/Pepper to taste
  • Fresh parsley or basil as garnish; optional

Instructions

  1. Bring a large pot of water to boil, salt generously.
  2. Cook pasta according to package directions, taking note that fresh pasta cooks quicker than dried usually.
  3. While the water gets to boiling and as the pasta cooks, make the sauce.
  4. In a large pan over medium-high heat, add the olive oil and celery, cook for 3 minutes.
  5. Add the ground beef, salt, and pepper and cook until done, about 5-7 minutes.
  6. Drain off any rendered fat.
  7. Add the sauce to the pan and mix the meat in well.
  8. Add the cooked pasta and toss.
  9. Gently fold in the white beans, heat through, about 2 minutes.
  10. Garnish with the optional parsley or basil, serve, and enjoy.
