Green Chile Corn

Green Chile Corn ~ Take that fresh corn on the cob and turn it on its ear by rolling it in spicy green chile sauce and crumbled cotija cheese.

Ingredients

  • 6-8 ears (or any really) fresh corn, husks and silks removed
  • Salt
  • 2-3 tsp white sugar
  • 1-12 oz jar Stubb's Green Chile Anytime Sauce
  • 1/2 cup cotija cheese; crumbled
  • 1/4 cup chopped cilantro

Instructions

  1. Remove the husks and silks from the corn.
  2. Bring a large pot of water to boil.
  3. Once the water is boiling, add the salt, a generous amount.
  4. Add the sugar.
  5. Place the corn into the boiling water, cover the pot, and allow the water return to a full rolling boil.
  6. Turn off the heat and keep the pot covered, allowing the corn to 'steep' for about 5 minutes.
  7. While the corn steeps, place the crumbled cheese on a plate and pour the sauce onto another.
  8. One by by, remove the corn from the post, shaking off any excess water, add corn cob holders (if using) and roll it in the sauce.
  9. Once the corn is throughly coated in the sauce, roll it in the cheese.
  10. Sprinkle the corn with the chopped cilantro and serve immediately.
  11. Remaining corn warm can be kept in the water for about 10 minutes without it becoming tough or overcooked.
