Chocolate Banana Oatmeal Muffins

Ingredients

  • 2 1/2 cups old-fashioned oats; ground
  • 1 cup plain Greek yogurt
  • 2 eggs
  • 1/2 cup Nesquik Chocolate Powder
  • 1/2 tsp . salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 ripe bananas

Instructions

  1. Prepare a muffin pan by spraying with cooking spray or if using liners, spray the insides of those.
  2. Grind the oatmeal in a food processor to desired fineness.
  3. Pour the oatmeal flour into a large bowl.
  4. Stir in the Nesquik, baking powder, baking soda, and salt. Set aside.
  5. Mash the bananas in another bowl, once mashed; add in the yogurt and eggs.
  6. Incorporate the banana mixture into the oat flour mixture and stir until combined.
  7. Scoop batter into muffin pan and bake at 400 degrees for 12-15 minutes.
  8. Remove from oven and allow to cool.
  9. Serve and enjoy.
  10. Will keep for a few days in an air-tight container.

Recipe Notes

These are not overly sweet. Add honey or sugar to taste if desired.
