Pork Teriyaki Fried Rice

Ingredients

  • 1 lb thin-cut pork chops; sliced into strips
  • 1 carrot; diced
  • 1/2 small onion; diced
  • 4 green onions; diced (divided white and green parts)
  • 3 cups cooked rice
  • 1/2 cup teriyaki glaze
  • 1/8 tsp black pepper
  • 1 cup frozen peas
  • 2 eggs; scrambled
  • Sriracha; to taste (I used 1 tsp)
  • 2 tbsp sesame oil

Instructions

  1. In a wok or large pan, scramble the eggs and then set aside.
  2. Add 1 tbsp sesame oil to the wok/pan and allow it to get hot; add the strips of pork and cook; about 3-5 minutes, depending on thickness.
  3. Add the carrots, onion, and white parts of green onions, cook for an additional 2-4 minutes, then remove from pan and set aside.
  4. Add the remaining sesame oil and allow it to come up to heat.
  5. Add the rice, string constantly to mix the rice into the oil.
  6. Once the rice is heated through and browning, add the meat, veggies, and egg back to the pan and toss in the black pepper, green onions, peas, teriyaki glaze, and sriracha. Mix well and cook for about 2 minutes, or until everything is well blended and heated through.
  7. Serve and Enjoy.
