In a large pan or a wok, heat the oil over high heat.

Add the lemongrass, garlic, and ginger, stir.

Once fragrant (just a few seconds), add the beef, cook for 2 minutes.

Add the bell peppers and green beans and cook for 4-5 minutes or until the veggies reach the desired doneness.

Add the oyster sauce, brown sugar, cilantro, and peanuts. Mix well. Cook together for another 2 minutes.

A handful or scoopful at at time, add the softened rice noodles. Do not add the all the noodles at once because they will clump and you won't be able to get them apart easily.
