Pomegranate Honey Glazed Pork Belly is a succulent entree with a tangy sweet glaze on a roasted pork belly for a luscious, crowd pleasing meal.
Pre-heat oven to 425°F.
Sprinkle the pork belly with salt and pepper and brush with olive oil.
Place on a rack in a pan and cook for 30 minutes at 425°F.
Remove pan from oven, lower heat to 325°F.
Juice the pomegranate seeds by hand and mix with the honey, brush the top of the pork belly and return it to the oven. Save glaze for additional basting.
Cook pork belly an additional 25 minutes per pound (about 50-60 minutes), basting occasionally with additional pomegranate/honey glaze.
