Spanish Rice Skillet

Ingredients

  • 1 lb lean ground beef
  • 1 Anaheim chili; seeded , deveined, and diced
  • 1 small or 1/2 large onion; diced
  • 2 cloves garlic; minced/grated
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 can diced tomatoes
  • 3 cups cooked Spanish rice
  • 1/4 cup cheddar cheese plus a bit more
  • 1 can pinto beans; drained and rinsed
  • Salt/pepper to taste
  • Extra virgin olive oil; optional

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat.
  2. When the meat is mostly cooked, drain off any large amounts of rendered fat, or add olive oil if no fat has been rendered.
  3. Add the chili powder and cumin.  Mix well.
  4. Add in the garlic, diced onions, and Anaheim chili pepper.  Cook for 2-3 minutes.
  5. Incorporate the rice into the meat mixture.
  6. Cook one minute.
  7. Add the canned tomatoes with its juices and the cheese.  Mix well.
  8. Add the beans, salt and pepper.
  9. Gently mix everything together.
  10. Cook an additional 2-3 minutes or until the beans are warmed through.
  11. Dish up and serve with sprinkled cheese…possibly with some sour cream as well.
