Ingredients

ears corn; kernels removed
2-15
oz
. cans black beans; drained and rinsed
1-4
oz
. can green chilies
1
tsp
. chili powder
Juice of one lime
1
tbsp
. fresh cilantro; chopped plus more for garnish
Salt/pepper to taste
Queso fresco
(optional)
Instructions
Remove the kernels from the cob and blanch them for 5 minutes in salted boiling water.
In a sauté pan, add the freshly blanched corn, black beans, green chilies, chili powder, lime juice, cilantro, and salt and pepper. Mix well.
Garnish with queso fresco and cilantro. Serve.
