Italian Style Smoked Sausage and White Bean Soup

I’ve waxed poetically about all my loves this time of year. But one of my greatest loves have to be soup in a slow cooker. The ease of it all, one pot, slowly cooking all day long, filling the house with an aroma begging you to open the lid and sample.

I recently attended the annual Passport dinner at one of my favorite restaurants in town, Cafe Sabor, and Justin, the restaurant owner, sent me home with 8 links of the best tasting Italian style smoked sausage that has ever entered my mouth.

I wanted to make something utterly fancy with them, but I kept eating them, one by one, until there were only 4 left.  By that point, all notions of fancy were gone. A few hours later it was done. I think I stirred it once, not that I should have opened the lid, which we all know is a no-no for slow cookers, but I couldn’t resist and I needed (wanted) to taste test it.

I made this and ran out of time. I had an evening engagement, so I sampled it, took some pictures, and fed it to the child and the babysitter. Come breakfast the next morning….So delicious. Slow Cooker Italian Style Smoked Sausage and White Bean Soup

Ingredients

  • 1-32 oz low-sodium chicken broth
  • 4 links Italian smoked sausage; halved and sliced
  • 2-15 oz cans white beans; drained and rinsed
  • 1 cup onions , finely diced
  • 1 bunch kale; torn
  • 2 cups water
  • 1-15 oz can diced tomatoes
  • 5 gloves garlic; minced/grated
  • 1/8 tsp salt and pepper; +/- to tasted
  • 1 tsp dried rosemary; ground
  • 1/4 tsp paprika

Instructions

Slow Cooker

  1. Add everything to a slow cooker, turn on low and cook for 4 hours, lower to warm after 4 hours until ready to serve.

Stovetop

  1. Add the broth, water, onions, kale, garlic, herbs, salt, and pepper to a large pot. Bring to a boil.
  2. Reduce to a low simmer for 10 minutes, allowing both the kale and the onions to soften.
  3. Add the beans, tomatoes, and sausage and reduce to low, cook for 20 minutes or until all is heated through and kale has reached the desired tenderness.

    This is awesome! I actually plan to make soup today but did not think to add sausage to it. I have all the ingredients except the white beans but I bet any will work (I have a ton of Great Northern Beans soaking.)

    I love my slow cooker, and use it any chance possible. I actually made a version of this same soup not long ago, and it was such a hit! Like you said–toss it all in and let the slow cooker do the work. Delicious!

    I totally understand needing to test it. 😉 I have a problem of “needing” to test slow cooked things about an hour after it gets started. Whoops. This soup looks delicious! The Italian smoked sausage must add so much flavor.
