And you all know I love seasonal cooking. My tomato plants are bursting with plump, ruby, luscious fruit. Once a year I pluck off the fruit from my Roma plant and turn them all into sauce. My yield varies depending on how many tomatoes I get. This year I had 3 pounds and ended up with about 5 cups of sauce, which is enough for two dinners or one big party or a really hungry me.

Red sauce is my comfort food. Some people need chocolate (my back-up comfort food) and others need ice cream, but for me, it’s red sauce. The downside to my comfort food; it’s über messy. My stove, the backsplash, the counters, the floor, and I all end up speckled red. Everything cleans up fairly easily usually, except for my clothes, unless I rely on my trusted friend – Shout®Garden Tomato Sauce - Fresh from the garden tomatoes turned into to delicious sauce for your favorite pasta. And half the time I am wearing white because white is best for photographing my creations, and I don’t have a Fear of white, as one in three Americans will avoid wearing white because of stains. Luckily for me, I have Shout® to help with my little messes.

I have relied on Shout®  for all my normal stains, but dealing with my love of sriracha and deeper love of red sauce, I use  Shout® Advanced Gel. The package says for best results, let the gel sit on the garment for 24-hours, which honestly is quite perfect for me and my overall dislike of doing laundry. I don’t always make this big of a mess with red sauce, it usually is a bit worse when I use fresh from the garden tomatoes because of the few extra steps necessary to turn them into garden tomato sauce. But as long as I have Shout®, I am alright with the messes I make, and really, fresh from the garden tomato sauce it utterly worth making a mess for.

Garden Tomato Sauce

Ingredients

  • 3 lbs Roma tomatoes
  • 3 ribs celery; roughly chopped
  • 1 large/2 medium onions; roughly chopped
  • 4 large garlic cloves; roughly chopped
  • 2 tbsp extra virgin olive oil
  • 2 1/2 tsp kosher salt; divided 1/1.5
  • 1 cup water
  • 2-6 oz cans tomato paste
  • 1/4 tsp sugar
  • 2 bay leaves
  • 1/2 tsp Italian seasoning
  • 1/2 tsp oregano
  • 1/4 cup parmesan cheese (optional)

Instructions

Blanching Tomatoes

  1. Slice an X in the bottom of each tomato.
  2. Bring a pot of water to boil.
  3. Place the tomatoes in the pot and allow the water to return to a boil.
  4. Once the water has resumed boiling, cook tomatoes for 15-20 seconds.
  5. Remove each tomato and plunge into an ice bath.
  6. Once the tomatoes have cooled to touch, remove the skins and core.

Sauce

  1. Heat olive oil over medium high heat in a large pot or French oven.
  2. Cook the onions, garlic, 1 tsp salt, and celery until soft; about 10 minutes
  3. Once the vegetables are soft, add the tomatoes and cook for an additional 5 minutes, breaking them up.
  4. Transfer the vegetables to a food processor and puree until smooth.
  5. Return to the sauce to the pot and add the herbs, remaining salt, water, and tomato paste.
  6. Bring to a boil and allow to boil for 5 minutes, stirring continuously.
  7. If using Parmesan cheese, stir it in until well blended.
  8. Reduce to low and simmer for an hour.
  9. Serve and Enjoy or portion out, allow to completely cool, and freeze for up to one month.

Perfect for your summer bounty ~ The Complete Savorist As you can see, after making one rather quick batch of garden tomato sauce and being careless by not wearing an apron, I have a few stains to deal with. The splattering portion of cooking happens quickly and then it’s over. The second I got the sauce on to just simmer, I ran to the laundry closet and pulled out the Shout® Advanced Gel and got my shirt treated. I really worked the gel into the stain, then as I mentioned, I let it sit over night and went back to tend to my dish.

The next day when I washed the shirt, then before I tossed it in the dryer I pulled it out, holding my breath because we all know it could have very easily have been ruined. But it wasn’t.     Red sauce is totally comfort food- I’m one of those weird people who love extra sauce on my pizza!

    There is nothing better than homemade tomato sauce! I love using up my year end garden tomatoes to make sauce, canning it to enjoy thorughout winter.

    I have at least 25 aprons (my MIL makes them for a living) and I NEVER wear one, so I stain pretty much everything I cook in 🙂 I NEED shoutbig time

    You ARE ambitious! My red sauce comes out of a bottle. LOL I also don’t own an apron which is why my laundry room is stocked with Shout as well. It really does take out tomato stain!

    This tomato sauce looks super delicious and it has the perfect texture. Love all the spices you added, sounds tasty! I use Shout as well to treat spots on my clothes! It’s works like a charm! It’s amazing how white that shirt looks! Love the Shout gel!

    Nothing beats a homemade tomato sauce. This looks fantastic! I remember one time I was making spaghetti sauce while pregnant and I was squeezing some tomato paste from a tube into the sauce and it squirted on to my belly bounced off and left NO spot. I was amazed. 🙂
