Sweet Chili Cucumbers and Onions

I was making grilled chicken with some Asian flavors and had some jasmine rice I wanted to use up. The cucumbers and onion just worked themselves into this wonderful dish.  Sweet, tangy, and tiny bit of heat.  If a dish can be refreshing, this one was refreshing.To be perfectly honest, I would be more than content to just eat this salad (?) straight from the bowl, all on its own.  It was that good.  Tomorrow I will share the chicken recipe with you and the dish fully assembled.  But since these cucs and onions were so good solo, I felt they deserved their own post.

And then I made it again when I made a traditional Vietnamese dish, Mint and Ginger Chicken. This might be one of my new favorite dishes when I have left over cucumbers from the summer bounty. It comes together so incredibly fast, that I just can’t go wrong. I know you will love this Sweet Chili Cucumber and Onion salad.

Sweet Chili Cucumbers and Onions

Ingredients

  • 2 cucumbers; thinly sliced (or however you’d like them)
  • 1/2 cup red onion; thinly sliced
  • 2 tbsp . rice vinegar
  • 1 tbsp . sweet chili sauce
  • 1 clove garlic
  • Salt/pepper to taste

Instructions

  1. Add the cucumbers and onions to a medium sized bowl.
  2. In a smaller bowl, combine the vinegar, sweet chili sauce, garlic, salt and pepper.
  3. Whisk together well and pour over the cucumbers and onions.
  4. Toss them all together well and cover.
  5. Refrigerate for at least 30 minutes.

      Kelly, I am happy you love the recipe, but while I did not add any sugar, sugar is an ingredient in the sweet chili sauce. There was no corn syrup though.

    Oh yes!! I’ve had a version of this made with all rice vinegar, but I’m loving the chili sauce in here. And I love that you don’t have added sugar. Making it!!!

      Thank you Kim. I love sweet chili sauce, which does have sugar in it, but I did not add any additional sugar.
