Grilled Cuban Pork Chops ~ Citrus and herb marinated pork chops, then spiced rubbed and grilled ~ The Complete Savorist When I was planning my meal, the first menu item was my version of Cuban spiced pork chops. They are so simple to make, but pack a punch of flavor.  I enjoy my own food, obviously, but these chops, well, I bounced in my chair while eating due to the layers of citrus and spice.  They are mild, no heat to speak of, but the cumin and oregano shines through and the combination of orange and lime juices meet it, and it is just a delightful combination.  Add in the flavor of the grill, it’s down right delectable.
The prep was quick, a minor amount of attention is needed during the marinating process.  Add the rub, grill, and dinner is ready.  I think this will be a hit with even your pickiest eater.

Dinner was served up with some fantastic side dishes.
Cilantro Lime Rice a mild rice made fragrant with lime and cilantro.
White Corn and Black Beans Fresh summer corn and black beans tossed with queso fresco.
Strawberry Salsa Sweet yet spicy salsa made from freshly picked strawberries.

Grilled Cuban Pork Chops

Ingredients

  • 4 bone-in pork chops

Marinade

  • 1 cup orange juice
  • 1/2 cup fresh lime juice
  • 1/4 cup red wine vinegar
  • 1/2 onion; sliced
  • 3-5 garlic cloves; chopped
  • 1 tbsp . fresh cilantro , chopped

Rub

  • 1 tbsp . black pepper
  • 1 tbsp . salt
  • 1 tbsp . oregano
  • 1 tbsp . onion powder
  • 2 tbsp . cumin
  • 11/2 tbsp . granulated garlic

Instructions

  1. In a large bowl, add the orange and lime juice, vinegar, onion, garlic and cilantro.
  2. Stir well and add the pork.
  3. Allow it to sit in the bowl for a minute and then add it to a gallon-size or large zip-seal bag.
  4. Place on a baking sheet.
  5. Allow the pork to marinate for one hour, flipping the bag every fifteen minutes.
  6. Add all the seasonings and spices to a bowl and blend them together well.
  7. Pre-heat the grill.
  8. After the pork chops have marinated for an hour, remove them from the bag and discard the liquid and onions.
  9. Pat the chops dry and apply the rub to both sides of the pork chops.
  10. Grill the chops on each side for 4-7 minutes, depending on how thick the chops are.
  11. Garnish with freshly chopped cilantro and serve.

    The marinade and rub remind me of carne asada – we will definitely be trying this one.
